In the fall of 2015, we came up with the idea to glean apples from public orchards and neighborhood residents who had a bumper crop of apples. What resulted was a 10-week pilot project of dehydrating apples (along with carrots, kale and strawberries) into edible little fruit leathers. This project allowed us to employ more transitional employees in the work of food production; create an affordable, nutrient-dense value-added product; and creatively use resources from our community that may have otherwise gone to waste.
